Tuna Melts

Yummy. Open faced sandwiches are my new thing. I love them! And this is one of my new favorites!!


Tuna Melts:
2 Cans Tuna (in water) - drained
1/3C Celery - chopped
1/4C Green Onions - chopped
1/4C Plain Dry Bread Crumbs
2T Mayo
2T Sweet Pickle Relish
1 Egg White
1tsp Mustard
2 Ciabatta Rolls - split & toasted
Lettuce or Coleslaw
Tomato Slices
Cheese Slices - cheddar or colby jack
Chipotle Seasoning (optional)*
Mayo (optional)*

*Mix chipotle seasoning and mayo to taste.....about 1/4C mayo adding in seasoning to taste.

Flake tuna into bowl. Add celery, green onions, bread crumbs, mayo, pickle relish, egg white and mustard. Mix well to combine. Form into 4 round patties. Lightly spray pan with cooking spray/olive oil. Over med-high heat cook patties 6-8 minutes turning once. Top with cheese and cook an additional 2 minutes to melt cheese (cover pan if needed).

Spread chipotle/mayo mix on the ciabatta rolls. Then add lettuce or coleslaw, tuna patty and tomato. Top with additional chipotle/mayo mix and a few green onion tops.
