Yum!! I heart fish tacos!! I don't make them all that often so when I do, I always overeat!! These are simple, fast and super yummy.
Fish Tacos
4 Fillets White Fish (Mahi Mahi, Tilapia, or Cod)
4 Tortillas (Flour)
1C Coleslaw Mix or Shredded Cabbage
1C Shredded Cheese (Cheddar, Mexican, or Colby Jack)
1/2C Mayo
1T Lime Juice
2tsp Milk
1/2 Can Black Beans (drained & rinsed)
1/2 Can Corn (drained)
1/4C Tomatoes (seeded & diced)
1/8C Red Onion (diced)
Salt
Pepper
Lime Juice
Pat fish dry, season both sides with salt and pepper. Place on lightly sprayed baking sheet and bake @ 375* 20-25 minutes until fish flakes easily. Flake with fork when cooked through.
Combine mayo, milk and 1T lime juice in small bowl, mix well. Set aside.
Combine beans, corn, tomatoes, and onion in small bowl, mix well. Season to taste with salt, pepper and lime juice. Set aside.
In tortilla layer coleslaw, cheese, flaked fish, bean mixture and drizzle with dressing. Roll and eat.
