Walgreens Loot

Still in my Walgreens learning curve but I think I'm getting the hang of it. I made 3 different transactions so I could use the register rewards right away. And I needed everything I got, well not the coffees.

This trip was 2 transactions (the first one gave me $5 in RR which I used right away) and left me with $6 in RR's that I used to buy the stuff below.

So that is $62.44 worth of products for only $26.83!!

Blackened Steak Seasoning

I am so tired of buying different seasonings all the time so decided to find out what is in Blackened Steak Seasoning.....before buying it this time. And surprise I already had all the different seasonings so made my own and saved myself $4.

Blackened Steak Seasoning
1tsp each of the following:
Salt
Pepper
Cumin
Paprika
Cayenne
Oregano

Cajun Steak Sandwich

I really liked this but would make it a bit differently next time....it was a bit hard to eat leaving the steak whole. Next time I'd slice the steak into strips before building the sandwich and I completely forgot to toast the ciabatta rolls. So I'd do that too. The cajun sauce was delicious and doubled as a dipping sauce for the oven fries, yummy!


Cajun Steak Sandwich
2 Rib-eye Steaks - 8oz, 1/2" thick and trimmed
3tsp Cajun or Blackened Steak Seasoning
1/4C Mayo
1T Ketchup
1tsp Molasses
2 Ciabatta Rolls - split and toasted
Tomato Slices
Red Onion Slices
Green Onion Tops - sliced

Cut steaks in half crosswise. Coat both sides of steak with 1 1/2tsp of cajun seasoning. In heavy skillet over med-high heat cook steaks 3-5 minutes each side.

In small bowl combine mayo, ketchup, molasses and remaining seasoning.

Place one steak on each roll and top with sauce, red onion, tomato and green onion slices. OR slice cooked steaks into thin strips before placing on rolls, drizzle sauce and add toppings.

Tuna Melts

Yummy. Open faced sandwiches are my new thing. I love them! And this is one of my new favorites!!


Tuna Melts:
2 Cans Tuna (in water) - drained
1/3C Celery - chopped
1/4C Green Onions - chopped
1/4C Plain Dry Bread Crumbs
2T Mayo
2T Sweet Pickle Relish
1 Egg White
1tsp Mustard
2 Ciabatta Rolls - split & toasted
Lettuce or Coleslaw
Tomato Slices
Cheese Slices - cheddar or colby jack
Chipotle Seasoning (optional)*
Mayo (optional)*

*Mix chipotle seasoning and mayo to taste.....about 1/4C mayo adding in seasoning to taste.

Flake tuna into bowl. Add celery, green onions, bread crumbs, mayo, pickle relish, egg white and mustard. Mix well to combine. Form into 4 round patties. Lightly spray pan with cooking spray/olive oil. Over med-high heat cook patties 6-8 minutes turning once. Top with cheese and cook an additional 2 minutes to melt cheese (cover pan if needed).

Spread chipotle/mayo mix on the ciabatta rolls. Then add lettuce or coleslaw, tuna patty and tomato. Top with additional chipotle/mayo mix and a few green onion tops.

Fish Tacos

Yum!! I heart fish tacos!! I don't make them all that often so when I do, I always overeat!! These are simple, fast and super yummy.


Fish Tacos
4 Fillets White Fish (Mahi Mahi, Tilapia, or Cod)
4 Tortillas (Flour)
1C Coleslaw Mix or Shredded Cabbage
1C Shredded Cheese (Cheddar, Mexican, or Colby Jack)
1/2C Mayo
1T Lime Juice
2tsp Milk
1/2 Can Black Beans (drained & rinsed)
1/2 Can Corn (drained)
1/4C Tomatoes (seeded & diced)
1/8C Red Onion (diced)
Salt
Pepper
Lime Juice

Pat fish dry, season both sides with salt and pepper. Place on lightly sprayed baking sheet and bake @ 375* 20-25 minutes until fish flakes easily. Flake with fork when cooked through.

Combine mayo, milk and 1T lime juice in small bowl, mix well. Set aside.

Combine beans, corn, tomatoes, and onion in small bowl, mix well. Season to taste with salt, pepper and lime juice. Set aside.

In tortilla layer coleslaw, cheese, flaked fish, bean mixture and drizzle with dressing. Roll and eat.

Glazed Chicken over Rice

This one was a hit. My husband and I both really liked this one!! Don't tell but I licked my bowl it was so good!!


Glazed Chicken over Rice
1lb Chicken Breasts - cut into 1" chunks
1/4C Soy Sauce
1/4C Honey
3T Veggie Oil - divided
2T Chili Sauce - prepared Heinz or Homemade Brand
1/2tsp Ground Ginger
1/4tsp Garlic Powder
1C Chicken Broth
1T Cornstarch
4C Coleslaw Mix - or diced cabbage green & red mix
1C Cashews - lightly salted
3C Cooked Jasmine Rice - or any white rice

In small bowl combine soy sauce, honey, 2T veggie oil, chili sauce, ginger and garlic powder. Pour over chicken in shallow dish to marinate for an hour (or overnight) in the fridge.

Mix together chicken broth and cornstarch, set aside.

In large skillet over med-high heat cook chicken and marinade. Bring to a simmer and stir occasionally for 5 minutes or until chicken is cooked through. Remove chicken from pan. Add remaining veggie oil and coleslaw to pan. Cook and stir 2-4 minutes or until coleslaw is tender. Stir in broth mixture, bring to a boil. Reduce heat to med-high and simmer 1 minute, until sauce starts to thicken. Add chicken back to pan and heat through.

Stir in cashews and serve over rice.

Tomato and Basil Tilapia

I made this the other night and it turned out pretty good. I'm always looking for new ways to bake fish and came across this one. It was easy and fast. I should have cut my bread a bit smaller but it still tasted delicious.


Tomato and Basil Tilapia
1/3C (or less) Olive Oil - divided
3 Slices Wheat Bread - chopped to make bread crumbs
1 Clove Garlic - minced
1tsp Italian Seasoning
4 Fillets Tilapia (or any white fish)
1/2C Tomato - seeded & diced
2tsp Lemon Juice
1T Fresh Basil - chopped
Grated Parmesan

Spread 1T or so olive oil in the bottom of a 13x9. Pat fish dry, season with salt and pepper and place in 13x9 (skin down if fillets have skin).

Saute bread crumbs in remaining olive oil over med-high heat until they begin to brown, stirring often. Stir in garlic and italian seasoning. Continue to cook and stir until golden brown. Remove from heat. Add tomatoes to bread crumb mixture and stir to combine. Cover top of fillets with mixture and sprinkle with lemon juice and grated parmesan.

Bake @ 375* for 20-25 minutes or until fish flakes easily. Top with basil and serve.

I just love when a plan comes together. I went to Albertsons coupons in hand and they had everything I wanted!! All this cheaper than 1 box of cereal on a good sale:)

Albertsons Doublers

The ads were boring this week, good thing I didn't really need anything. Of course since they have the 'double your manufacturers' coupons out at Albertsons I have to go shopping:) Here's what I'm going to buy:

Rosauers Cereal P. 2

Turns out it's not as exciting of a sale as I thought it would be....I'm still going to go and here's what I'm buying:

2 boxes Mini Wheats @ $1.69ea less $1.50/2 Coupon = $1.88 (.94ea)
2 boxes Cheerios @ $1.69ea less $1/1 Coupon x 2 = $1.38 (.69ea)
3 boxes Kix @ $1.69ea less $1/3 Coupon (found in newspaper) = $4.07 (1.35ea)
**not a super deal but Kix rarely go on sale.

So all in all I'll spend $7.33 for 7 boxes of cereal.

Cereal Sale @ Rosauers

Yay it is tomorrow (Thursday 2/11) from 7am-8pm. I don't typically hit the 13hr sales but this is a good one to get my feet wet on.

I'll be searching for coupons sometime today.....I know I already have some but want more. I'll post links to any I find. A good place to start is always here.

Cereal is on for $1.69 and I've seen coupons for $1/2 or $1/3. So that could bring it down to $1.19 per box. Albertsons is also having sales this week @ $1.88 per box plus they have "double" coupons (making it $.88 per box on some) out in todays ad.....so Albertsons is a better deal depending what type of cereal you like/want.

Chicken & Asparagus Rolls

I saw this in a magazine and it looked so yummy I had to try it. It really was delicious, if you like asparagus.....turns out I'm not a big fan. Next time I make it I'd probably only put 1 or 2 spears in or leave it out all together. The pepperoni, cheese and sauce were very good all on their own.

Chicken & Asparagus Rolls
4 Chicken Breasts - pounded to 1/4"
20 Small Slices Pepperoni
4 Slices Provolone Cheese
12 Asparagus Spears - trimmed
1C Pasta Sauce (5 Cheese or Tomato & Basil)
1/4C Grated Parmesan Cheese

Place 5 pepperoni slices, 1 slice of cheese and 3 asparagus spears in center of each pounded chicken breast. Roll and secure with toothpicks

Place 1/2C pasta sauce in bottom of 13x9. Place chicken rolls toothpick down on sauce. Top with remaining pasta sauce and grated parmesan cheese. Bake @ 350* for 35-40 minutes.



Walgreens Shopping

I'm heading to Walgreens this week. I'm still trying to figure out their "Register Rewards" but seem to be getting better and better at it. They give you $$ back for buying certain items. I try to make sure I actually need the items but it's hard to pass up free!! A lot of times they will have a register reward that is the same as the product price, basically making it free. And if you happen to have a coupon, well then you just made a little money:) See transactions #1 & #3 below.

The only 2 annoying things 1) you have to do multiple transactions to get all the register rewards you want, their computer only allows 1 reward per transaction and 2) you don't get cash, just a coupon for however many dollars off on your next transaction. I suppose there may be more annoying little rules but I haven't found them yet.

So here's what I'm thinking of getting this week:

Dove for Men @ $5.99 less $1.50 coupon = $4.49, get $5.99 back
**I don't really need this but did you notice I'm spending less than they are giving me back?! So I'm making $1.50 on this transaction. Buy this to save on the cleaning stuff that I actually need.

Swiffer Wet Jet Cleaner @ $3.99
Magic Erasers @ $2.50
= $12.48 less $2RR (last week) & $5.99 (above) = $4.49, get $2 back

**I will have to pick up 1 other item on this transaction because I have too many coupons so I'm planning to get 2 Valentines pencils for $.20 each.

**I need more items on this one too so I'm going to get Valentine activity books for $.34 each. Oh and I don't really 'need' these, this is more of a want!!

Enchilada Casserole

I love to make this, it's so easy and makes tons of leftovers. And of course it's delicious! You can either bake it right away or freeze it unbaked, pull it out of the freezer and pop it in the oven.


Enchilada Casserole
1lb Ground Beef
1 Large Onion - chopped
2C Salsa - Chunky style
1 Can Black Beans - drained & rinsed
1/2 Can Corn - drained & rinsed
1/4C Zesty Italian Dressing
2T Taco Seasoning
6 Flour Tortillas
1C Sour Cream
1 1/2 - 2C Shredded Cheese

Brown beef and onion together until cooked through. Drain. Add salsa, beans, corn, dressing and taco seasoning to meat. Mix well.

In 13x9 (lightly sprayed) arrange 3 tortillas in single layer to cover bottom and top with layers of half each of the meat mixture, sour cream and cheese. Repeat all layers. Cover with foil and bake @ 400* for 30 minutes, remove foil and bake another 10mins. Let stand 5 minutes.

To freeze and cook later: line 13x9 with foil before assembling casserole. Cover and freeze. When ready to cook cover with foil and bake @ 400* for 1 hour. Remove foil and bake another 15-20 minutes. Let stand 5 minutes.
