This one was a hit. My husband and I both really liked this one!! Don't tell but I licked my bowl it was so good!!
Glazed Chicken over Rice
1lb Chicken Breasts - cut into 1" chunks
1/4C Soy Sauce
1/4C Honey
3T Veggie Oil - divided
2T Chili Sauce - prepared Heinz or Homemade Brand
1/2tsp Ground Ginger
1/4tsp Garlic Powder
1C Chicken Broth
1T Cornstarch
4C Coleslaw Mix - or diced cabbage green & red mix
1C Cashews - lightly salted
3C Cooked Jasmine Rice - or any white rice
In small bowl combine soy sauce, honey, 2T veggie oil, chili sauce, ginger and garlic powder. Pour over chicken in shallow dish to marinate for an hour (or overnight) in the fridge.
Mix together chicken broth and cornstarch, set aside.
In large skillet over med-high heat cook chicken and marinade. Bring to a simmer and stir occasionally for 5 minutes or until chicken is cooked through. Remove chicken from pan. Add remaining veggie oil and coleslaw to pan. Cook and stir 2-4 minutes or until coleslaw is tender. Stir in broth mixture, bring to a boil. Reduce heat to med-high and simmer 1 minute, until sauce starts to thicken. Add chicken back to pan and heat through.
Stir in cashews and serve over rice.
