Chicken Cordon Bleu

This recipe is simple and delicious. A favorite for sure.


Chicken Cordon Bleu
2C Stove Top for Chicken (prepare as directed, set aside)
4 Chicken Breasts
4 Slices (thin) Deli Ham
4 Slices Provolone Cheese (swiss or mozzarella works too)
1 Can Cream of Chicken Soup
1TB Dijon Mustard

Place chicken in 13x9. Combine soup and dijon in small bowl, set aside. Top each chicken breast w/ 1 slice of cheese and 1 slice of ham. Spoon soup mixture evenly over chicken, top with prepared stuffing and bake @ 400* for 25-30 minutes or until chicken is cooked through.

Birthday Cakes

I hate to bake but family birthday cakes are something I do enjoy. They're never anything fancy but always look good and taste delicious.

Cheeseburger Pie

I was a little skeptical about this one, I've never been a big "casserole" fan. But this was delicious. My husband said he'd like to see it again, that's always good!


Cheeseburger Pie
1lb Lean Ground Beef
1/4C Onion - diced
1/2C Bread Crumbs
1/4C Ketchup
2tsp Mustard
1/2tsp Salt
1 Box (4 servings) Instant Mashed Potatoes (Butter or Plain)
1C Shredded Cheddar Cheese
2-3 Slices Bacon - cooked/crumbled (or bacon bits)
1 Small Tomato - seeded/chopped
Green Onion Tops - sliced

Combine beef, onion, bread crumbs, ketchup, mustard and salt in medium sized bowl. Mix well. Press mixture in bottom of ungreased 9" pie plate. Bake @ 375* for 15 minutes.

Prepare potatoes as directed, stir in 1/2C cheese and mix well. Keep warm.

Remove partially baked beef crust, pour off grease/drippings. Evenly spread potatoes on top of crust. Bake another 15 minutes. Or until beef is cooked through.

Top with tomato, cheese and bacon. Bake another 5 minutes or until cheese is melted. Top with green onions and let stand 5 minutes before serving.

Frittata

Breakfast for dinner is always a hit. This is a favorite of ours.


Frittata
4 Eggs
4 Egg Whites
2TB Water
1/2Cup Tomato - seeded/chopped
1/4 - 1/2C Mushrooms - sliced/sauted
2-3 Slices Bacon - cooked/crumbled (or use Bacon Bits Recipe Pieces)
Green Onion Tops
1C Shredded Cheese (mozzarella and/or cheddar)

Beat together eggs, egg whites and water. Pour into greased 9" pie plate. Evenly sprinkle tomato, mushrooms, bacon bits, green onion and 1/2C cheese into eggs. With a spoon lightly press to make sure everything is covered by the eggs.

Bake at 350* for 25 minutes. Sprinkle remaining cheese over top. Bake an additional 5 minutes or until cheese is melted.
