I made this the other night and it turned out pretty good. I'm always looking for new ways to bake fish and came across this one. It was easy and fast. I should have cut my bread a bit smaller but it still tasted delicious.
Tomato and Basil Tilapia
1/3C (or less) Olive Oil - divided
3 Slices Wheat Bread - chopped to make bread crumbs
1 Clove Garlic - minced
1tsp Italian Seasoning
4 Fillets Tilapia (or any white fish)
1/2C Tomato - seeded & diced
2tsp Lemon Juice
1T Fresh Basil - chopped
Grated Parmesan
Spread 1T or so olive oil in the bottom of a 13x9. Pat fish dry, season with salt and pepper and place in 13x9 (skin down if fillets have skin).
Saute bread crumbs in remaining olive oil over med-high heat until they begin to brown, stirring often. Stir in garlic and italian seasoning. Continue to cook and stir until golden brown. Remove from heat. Add tomatoes to bread crumb mixture and stir to combine. Cover top of fillets with mixture and sprinkle with lemon juice and grated parmesan.
Bake @ 375* for 20-25 minutes or until fish flakes easily. Top with basil and serve.
