Better late than never right?! Here's a peek at our Christmas Eve food in pictures with a recipe or two. I was on a mission to keep costs down and variety up.....I think I did pretty good.

Taco Dip
12oz Cream Cheese - softened
1/2C Sour Cream
1tsp Chili Powder
1/2C Salsa
2C Mexican Style Shredded Cheese
1/2 Can Black Beans - rinsed and drained
1C Lettuce - shredded
3 Tomatoes - diced
Sliced Olives - 1 to 2 small cans
Green Onion Tops
In large bowl beat cream cheese, sour cream, and chili powder until smooth. Stir in salsa. Mixing well. Spread onto large serving platter, cover and refrigerate 15 - 20 minutes.
Top with black beans and 3/4 of cheese, lightly press cheese and beans. Then top with lettuce, tomato, olives, green onion and sprinkle with remaining cheese. Serve with tortilla chips or fritios scoops.
Crab Dip
1/2lb Velveta Cheese - Cubed
3/4C Mayo
1-2 Cans Crab - drained, flaked with fork
Green Onion Tops
Combine all ingredients in baking dish (9" round, 8x8 etc) and bake at 200* for 1 hour. Serve with crackers.
